Today's tasty breakfast treat was too good to keep to myself and makes for a nifty blog! Disclaimer: I made this recipe up myself using my vast knowledge of pancake batter as a basis. If it doesn't work for you, tough beans, pal.

Ingredients:

1 cup of flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 cup buttermilk
1/2 teaspoon salt
1 egg ( used 1/4 cup Eggbeaters)
1 mango, and by "1 mango", I mean "one fresh mango that you hack to pieces yourself"

Mash up the mango, juice and all in a big mixing bowl. add the buttermilk, baking soda, baking powder and egg. Beat with a fork until smooth. Add the flour, using a bit more than a cup if your mango is particularly juicy.

Heat your largest frying pan or griddle slowly on a low flame. The pan is hot enough when water drops "dance" on the pan when you sprinkle them on there. Spray some cooking oil on the pan, just a bit, and then add the cinnamon to the pancake batter. Stir, and fry up those babies.

Well, what are you waiting for? Go out and get all those ingredients and get cooking! These pancakes are truly a religious experience.
