More Mango!

As promised - here are some recipies for things to do with mangoes.

Mango Salsa
1 cup diced fresh mango
1/3 cup roasted red peppers, drained & diced
1/3 cup diced red onion
1 jalapeno pepper, seeded, minced
2 tablespoons fresh mint, chopped
1 tablespoon fresh lime juice
Combine all ingredients and chill. Serve with grilled fish or tofu, or if you must, I imagine it might go well with chicken.
Makes 1 1/2 cups.

Michelle's Mango/Blueberry Smoothie
1/2 cup mango juice - you can buy this in tetrapak or put in an entire mango
1/4 cup blueberries - preferably frozen before use
1/2 cup vanilla yogurt
1/2 cup vanilla soymilk
Combine all ingredients in the blender until smoooooooooth


Mango Yogurt Mousse
1 envelope (1 tablespoon) unflavored gelatin or agar
2 cups fresh mango purée (about 2 peeled and pitted mangoes) plus mango slices for garnish
1/3 cup sugar
1/2 teaspoon vanilla
1 cup plain yogurt
1 cup well-chilled heavy cream

In a small saucepan sprinkle the gelatin over 1/4 cup cold water, let it soften for 1 minute, and heat the mixture over low heat, stirring, until the gelatin is dissolved. In a blender blend together the mango purée, the sugar, and the vanilla, add the gelatin mixture, and blend the mixture well. Transfer the mixture to a bowl and stir in the yogurt. In a chilled bowl beat the cream until it holds stiff peaks, fold it into the mango mixture gently but thoroughly, and divide the mousse among 4 dessert glasses. Chill for at least 4 hours or overnight. Garnish with mango slices.
Serves 4.
